Matt Russell, an employee of Dimock Farms, works at stripping and wiping cows during the milking process. The Peru farm, owned by Don and Bruce Dimock, has 240 milking cows averaging 80 pounds of milk per cow.  Most of the milk goes to make Cabot cheddar cheese through Agri-Mark, a dairy farmer cooperative.
